I’m a long time Barefoot Contessa fan. I began collecting her cookbooks years ago when she had her store in East Hampton, I actually have a few signed copies! I really like her style; simply cooking with fresh seasonal foods.
I love to cook but I definitely had a learning curve to work out.
So what I did was:
-I chose a few new recipes each week and made them.
-I printed the recipes, put them in a three ring binder + soon created my own cookbook.
-I also rated the recipes
-and if I changed what the recipe called for I jotted down notes on my copy.
A few years after both my sons moved out my older son, Scott asked me for our family recipes so now they both have a cookbook full of our favorite family recipes.
If you’re looking for an absolutely delicious dessert, try the Coconut Cupcakes from
the barefoot contessa cookbook.
They are so good plain I thought oh I don’t even need the icing … but then you taste the icing and it’s crazy good, it’s hard to believe that they could get even better!
I actually froze half of the batch without the icing for a few weeks, and they were delicious. I needed to make more icing, but it was well worth the effort.
Enjoy!! ~ Nancy
