Uncovering original shiplap may not be all that common any longer or was actually never used in your part of the country. However, you can give a nod to shiplap by installing a shiplap inspired design element in your space pretty easily.

There are many different thoughts regarding the product type for adding a shiplap design element. MDF boards to pine & even plywood are all viable options. For a smooth uniform finish, MDF would be a good choice. To appreciate the wood grain try Pine. Planks can be cut uniform in lengths or not, the design is really up to you. However, in keeping with your design vision I think there are rooms where one material will work better than another.
